Wash and clean the vegetables. Dice the tomatoes and pumpkin, cut the spring onions into rings. Finely chop the dates. Rinse the meat, pat dry, cut into strips.
Fry the meat and onions in hot oil all around. Add the squash and sauté with the meat and onions until slightly softened. Add the tomatoes, dates and cinnamon, sauté. Pour in the broth, simmer for about 20 minutes.
Season with salt and pepper, serve. I recommend rice or couscous as a side dish.
