Finely dice onions and garlic cloves.
Crush coriander, cardamom, allspice, dried chili pepper and cumin in a mortar.
Sauté onion, garlic and spices in olive oil in a saucepan.
Stir in tomato paste, fry briefly.
Deglaze with vinegar and add tomato puree. Add the crushed tomatoes, grated orange peel and the cinnamon stick to the sauce. Season with salt, pepper and sugar. Cook open over medium heat for 20-30 minutes. Serve with pasta, fried fish, shrimp or poultry.
