Salt and pepper veal leg slices on both sides.
Fry in hot fat on both sides in a roasting pan. Dice the onion and sauté. Stir in tomato paste, fry briefly, then deglaze with Marsala and stock. Add thyme, season with pepper. Cover and braise in the oven at 200 degrees for 1 to 1.25 hours. Serve with tagliatelle, Italian bread and fresh spinach or zucchini vegetables.
