Place the flour in a bowl or on a work surface and make a well in the center.

Crumble in the yeast and pour in the water. Add the honey to the well and mix everything with your fingers. Add salt and olive oil, work everything into a smooth dough. Knead the dough vigorously with your hands for 5 minutes on a floured work surface. Return the pizza dough to the bowl and dust with a little flour. Cover with a damp cloth and let rise in a warm place for about 40 minutes. Preheat the oven to 225°C convection oven.

Divide the dough in half and roll out thinly on a floured work surface. Place on a greased pizza tray and poke holes with a fork. Then top as desired and bake in the hot oven for about 12 minutes until crispy. My tip: I put the covered dough in a sink filled with hot water.
