Beat sugar, salt, buttermilk, egg, oil, lemon zest and juice until fluffy. Mix flour with poppy seeds, baking powder and baking soda and fold in one tablespoon at a time. Place 12 paper muffin cups in the cavities of the muffin tray (or grease well) and pour the batter 2/3 into the cups. Then spread the currants on top and place in the preheated oven at 175 degrees Celsius and bake for 20 minutes.
