Season the meat with salt and pepper and put the bacon around the medallions and brown them in the pan with a little oil, then cook in the oven for about 60 minutes at 100 degrees. For the sauce, cut the pomegranate in half and remove 2 tablespoons of seeds, squeeze out half. Heat the gravy in the pan, pour brandy, pomegranate juice, and orange juice. Cook for 5 minutes.
