Peel and dice the onion and sauté in a pot until translucent. Deglaze with the vegetable stock. Add the diced potatoes with the chopped lovage and cook until done.
Cut the bacon into small cubes and fry in a pan with a little oil until crispy. When the potatoes are cooked, add the bacon to the potatoes in the broth and mash everything. If you like, you can set aside some of the potato cubes and bacon beforehand and add it back as a chowder afterwards.
Heat the sausages in the soup. Season to taste with salt, pepper and nutmeg. Before serving, sprinkle fresh herbs on the soup.
