Dissolve the yeast with honey in the water. Meanwhile, finely grind spelt and quinoa in a grain mill, mix flours and spices, knead with all ingredients in the machine for at least 5 minutes. Cover and let rise for 30 minutes.
Then knead again and form 12 rolls. Let them rest for 20 minutes and then bake in a preheated oven at 220°C for 20 – 25 minutes. You can also put a bowl of water in the oven.
