Put the sugar, vanilla sugar and cinnamon in a stainless steel pan and mix a little, add the water.
Bring to a boil without stirring. Add the almonds and continue to cook on high, stirring constantly, until the sugar becomes dry. Then turn the heat to medium and stir until the sugar starts to melt slightly and the almonds shine a bit. Then pour the almonds onto a baking sheet, pull apart with two forks and let cool.
