Boil potatoes 1 day before with salt.

Peel and press through a potato ricer. Peel and dice the onions. Fry the onions in oil until translucent (approx.10 min.). Let cool down a bit. Mix potatoes, quark, onions (with oil) and the egg. Season the mixture with salt and caraway seeds. Roll out the bread dough (you can order it at the bakery 1 day before – mixed bread dough) on an oiled and slightly floured baking tray. Put the potato mixture on it and spread the streaky diced bacon on the cake. Then put the cake in the oven preheated to 220 degrees/circulating air180 degrees and let it bake until it is golden brown on top. The Salzekuchen goes very well with a cold beer or a cup of coffee!
