Clean, quarter and wash the white cabbage. Slice one quarter into fine strips. Peel and finely dice 2 onions.
Boil broth, onions, vinegar, about 1 tsp. salt, some pepper and 2 tbsp. oil once. Pour hot over cabbage and knead well with hands. Cover and let stand for at least 1 hour.
Peel the remaining onions and cut into rings. Peel and chop the garlic. Cut the meat sausage into thick strips. Heat the remaining oil in a frying pan.
Sauté the sausage and onions while turning. Finally, season with gyros spice and garlic and fry briefly. Wash the parsley, dab dry and, except for some for garnish (if needed), cut into fine strips.
Mix the parsley into the gyros and season with pepper. Serve the gyros with coleslaw, pita bread and herb curd. Serve with chili peppers and olives, if desired.
