Blanch the parsley leaves for 30 seconds in boiling, salted water, rinse with ice cold water, drain and additionally dry with kitchen paper.

Heat the broth, puree together with the parsley and pass through a fine sieve. Boil peeled potatoes in salted water until done and mash thoroughly into mush.

Stir in enough parsley broth to give the mash a creamy consistency. If it is still too firm, stir in some additional milk. Add butter to the puree and let it melt. Then mix well and season with pepper, salt and nutmeg. This is a delicious side dish with a nice contrast to dishes with reddish vegetables.
