Cook the meat in a little water, cut into small cubes, brown lightly in the butter. Sprinkle with flour and fill with hot broth.
Boil well and remove from heat. Fold in egg yolk and white wine whisked together and season strongly with spices. Place the seasoning either in ovenproof ramekins, sprinkle with grated cheese and bake or stuff into hot puff pastry patties. Serve with lemon slices, toast and Worcester sauce.
