🍓 Ingredients

80 grams Powdered sugar
300 milliliters Cream
4 Eggs room temperature separated
as you like Fruit fresh or amaretto to garnish
60 milliliters Amaretto
80 grams Almonds chopped and toasted
8 Cookies (amaretti or about 25 amarettini) crumbled small

🍽 Instructions

Whip the cream until stiff and cover and place in the refrigerator. Line a cake tin (approx. 10 cm x 21 cm) with cling film so that it overhangs the long sides. Crumble the amaretti very finely in a freezer bag with a pastry roller.

Beat the egg yolks and sugar until light and the egg whites until stiff. Stir the amaretto, almonds and crumbled amaretti into the egg yolks. Now fold in the chilled cream and beaten egg whites and mix everything thoroughly. Pour this cream into the prepared mold and cover with the overhanging foil. Place in the freezer for 4 hours until the cream is frozen but not rock hard.

To serve, slice and serve with fresh fruit of choice and season (e.g. orange fillets) or drizzled with amaretto.

Tips: If you prepare this delicacy a day ahead, place it in the refrigerator for about 30 minutes to thaw before serving. The whole thing can also be frozen in serving dishes.
