Cut the pork, peppers and liver into cubes. Cut the bacon and gherkins into slices. Cut the onions into quarters and remove two slices from each quarter. Put all ingredients alternately on shish kebab sticks.
Place on a baking tray. Pour half of the sauce over it and put it in the oven at 180°C bottom/upper heat for one hour. After 30 minutes, turn the skewers once, pour the rest of the sauce over them and let them sizzle for another 30 minutes.
Mix all ingredients for the sauce and season to taste. The amounts of sauce are only guidelines, as some like more or less sauce or prefer it milder or spicier.
Serve with rice, baguette or French fries and salad, depending on preference.
