Melt butter in a saucepan, add crème fraîche and stir with a dash of milk until creamy.
Heat over low heat, stirring occasionally. Cut cheese as small as possible and add little by little so that it can melt well. Season to taste with oregano, salt and pepper. Goes very well with pasta, my favorite sauce with tortellini.
