For this low carb dish, chop all the vegetables.
In a small bowl, mix the eggs and season vigorously with curry, soy sauce, salt, pepper, paprika, basil and oregano.
It can be seasoned to your own taste, of course. In a small pot, cook couscous.
If you want it to be completely low carb, you can omit the couscous. Heat some olive oil in a pan. First lightly sauté the onion and pumpkin pieces and then add the rest of the vegetables. Add a little more olive oil if necessary to soften the vegetables a bit.
Depending on how soft or crunchy you want the veggies to be, keep turning them in the pan until the desired consistency is reached. Then add the eggs and continue to fry on all sides until the egg is cooked.
Add the couscous and mix everything well again. Now take a small taste and add seasoning if needed, I like to serve it with about 2 tablespoons of spoon cheese.
