🍓 Ingredients

200 grams Flour
3 tablespoons Oil
2 Eggs
200 grams Spinach
  Salt and pepper
100 grams Celery
100 grams Carrots
60 grams Cooked ham
1 clove Garlic
300 grams Minced beef
100 grams Leek
250 milliliters Meat broth
1 tablespoon Tomato paste
  Nutmeg

🍽 Instructions

Separate 1 egg. Knead a firm pasta dough from flour, 1 egg, egg yolk, 2 tablespoons oil, 20 ml water, salt, nutmeg. Clean, wash, blanch and chop spinach. Dice ham, fold in. Season with salt and pepper. Roll out pasta dough thinly on floured work surface. Cut out circles (diameter 8 cm), brush edges with egg white. Place spinach mixture on top, fold circles into half moons, press edges down. Cook in boiling salted water for 12 minutes. Wash, clean and dice vegetables. Fry minced meat in 1 tablespoon oil.

Add vegetables, squeeze in garlic, sauté. Stir in tomato paste and broth, season. Simmer for approx. 10 minutes. Serve the sauce with the Maultaschen.
