Heat 2 tablespoons of oil in a frying pan and fry the slices of liver cheese until brown. Remove and keep warm. Add 1 tablespoon of oil to the pan and stir-fry the sauerkraut with caraway seeds for 10-20 minutes. Season with salt and pepper. Spread wholemeal bread with mustard, spread half of the sauerkraut on it, place the slices of liver cheese on top and cover with the remaining sauerkraut. Fry 4 fried eggs in a skillet and place on top of the breads. Serve with gherkins.
