Mix flour, salt, 2 eggs and milk (add milk little by little, you may not need the whole amount) to a smooth batter. Fry 6 pancakes in 1 tablespoon of fat. In the remaining fat, sauté onions until translucent and brown the minced meat.
Season with parsley, salt, paprika and nutmeg. (If the meat dough is too soft, add 2 tablespoons breadcrumbs if necessary).
Spread the meat dough on the baked patties, roll them up and cut them in half. Now coat the halved Flädle in egg and breadcrumbs and fry at a moderate temperature until golden brown on both sides.
