Sort, clean and wash spinach. Place in a saucepan and stir until combined. Remove from pot, drain and chop.
Peel and finely chop the onion and garlic cloves. Heat the oil in a pan and sauté the onion and garlic until translucent. Transfer to a bowl and let cool.
Preheat the oven to 200°C (fan oven 180°C). Mix the onion mixture with ketchup, mustard and sugar and mix everything with minced meat, oat flakes, eggs and spinach to a meat dough. Season with salt and pepper.
Pour the meat dough into a loaf pan, place the bacon slices on top. Cover the roast with aluminum foil and bake in the oven for about 45 min. 15 min.
before the end of the cooking time, remove the aluminum foil and let the meatloaf get crispy brown.
