Peel the potatoes and cut them in half. Season the minced meat well and form into small meatballs so that they fit between the halved potatoes.
Place one meatball between each two potato halves. Place the stuffed potatoes in a tall pan, pour the vegetable broth over them, and if there is any ground meat left over, just add it to the broth in flakes. Put the lid on and simmer slowly until the potatoes are tender.
