Grate some of the lemon zest (about 1/2 – 1 tsp.).
Squeeze the lemon and collect the juice. Pour 500 ml of milk into a pot. Add the herbs and the zest. Season and bring to a boil, stirring every now and then. Add a little lemon juice to taste. Mix the remaining milk with the flour and stir in.
Simmer for a few minutes. If you like, you can use fresh herbs, but then everything should simmer a little longer.
