🍓 Ingredients

1 can Coconut milk
500 grams Chicken breast fillets or turkey breast fillet diced
1 jar Corn cobs halved
150 grams Mushrooms quartered
100 grams Bamboo shoots
2 stems Basil (Thai basil) the leaves
1 package Eggplant Thai green diced
2 splash Lime juice or lemon juice
  Soy sauce
1 tablespoon Curry paste green
  Coriander ground or fresh
1 cup Water hot

🍽 Instructions

About 2 – 3 hours before preparation, marinate the poultry with soy sauce and sugar.

Then fry the meat and set aside. Sauté the vegetables briefly as well. Then heat the coconut milk and stir in the curry paste. Add another cup of hot water, bring to a boil, then add the vegetables and meat back in.

Simmer gently for about 5 – 10 minutes and season with lemon and cilantro. All ingredients can be found in the Asia store.
