The amount and type of vegetables can of course be varied and is only a suggestion here. The important thing is that everything is cut into nice fine strips or rings.

Mix everything together and arrange on larger lettuce leaves on individual plates. Dressing: crush chili, garlic cloves, peanuts and the bean rings in a mortar (preferably an original Pock Pock – because it is so nice and big ). Then add fish sauce, brown sugar, juice of the limes and tamarind juice.

Mix everything well and let it sit for a short time. Pour the dressing over the raw vegetables and sprinkle with plucked cilantro leaves. Serve immediately.
