Wash the tomatoes, cut them into quarters and remove the stalk.
Heat oil in a small pan and sauté onion and garlic until tender (add a little water if necessary).
Put tomatoes and onion-garlic mixture into a blender and puree.
Pass through a fine sieve into a saucepan. Season with salt and pepper, sugar, possibly cayenne pepper.
Wash basil, shake dry and cut into fine strips.
Add to soup and stir in. Leave to infuse for a few hours (preferably overnight) in the refrigerator.
Remove from refrigerator and warm up on the stove at mild heat to eating temperature (do not boil!!!
).
Serve with spelt pasta, such as spaghetti, and with a large salad. Also very good with rye pasta. Tomatoes count as part of the protein group in the Food Combining Diet when cooked.
However, I still wanted to eat pasta with tomato sauce, so I came up with this sauce recipe. Since the sauce is only heated, it counts to the neutral group and can be eaten with pasta from the carbohydrate group.
