Wash the turkey meat, pat dry and cut into rough pieces. Clean, wash and dry the onions and cut them into diagonal pieces. Clean the chili pepper, remove the seeds and cut into fine rings.

Peel and finely chop the garlic.

Wash, peel and core the apples, cut them into quarters and chop them coarsely. Wash the rice, put it in boiling salted water, simmer for about 5 minutes, cover and let it swell. Heat the oil in a pan and fry the meat in it vigorously, add apples, onions and garlic, sprinkle with curry, roast everything briefly. Deglaze with broth and coconut milk, bring to a boil and simmer for about 3-4 minutes. Mix cornstarch with 3 tablespoons cold water, add to the curry and bring to the boil again.

Remove the finished curry from the heat, stir in the yogurt and season with salt. Arrange on plates with rice and garnish with mint leaves and chili rings. Serve immediately.
