Beat egg whites and salt until stiff.
Mix remaining ingredients well.
Fold in egg whites.
Spread batter into round silicone mold.
Bake 8 minutes at 750 watts (adjust time if wattage is slightly higher/lower).
Let cool.
Mix frosting, spread on top only and sprinkle with pistachios. If you like, use marzipan carrots for decoration. Still tastes good the next day, doesn’t get rubbery or dry like most micro cakes.
Can also be prepared gluten-free with special flour due to the small amount of flour.
