🍓 Ingredients

120 grams Sugar
130 grams Almonds ground not peeled
130 grams Carrots grated
3 large Eggs separated
1 package Vanilla sugar
1 pinch Salt
3 tablespoons Water
2 splash Lemon juice concentrate
1 heaped teaspoons Baking powder
120 grams Powdered sugar
as you like Pistachios chopped (approx. 15 g)
3 tablespoons Water
45 grams Flour

🍽 Instructions

Beat egg whites and salt until stiff.

Mix remaining ingredients well.

Fold in egg whites.

Spread batter into round silicone mold.

Bake 8 minutes at 750 watts (adjust time if wattage is slightly higher/lower).

Let cool.

Mix frosting, spread on top only and sprinkle with pistachios. If you like, use marzipan carrots for decoration. Still tastes good the next day, doesn’t get rubbery or dry like most micro cakes.

Can also be prepared gluten-free with special flour due to the small amount of flour.
