Cook the vanilla pudding and let it cool slightly. Mix the egg yolk with the vanilla pudding. Stir in the 1/2 lemon zest.
Gradually add the flour and mix everything well. Beat the egg whites until stiff and fold into the batter. If you like, you can stir 1 tablespoon of juniper liqueur (genever) into the batter. Preheat the waffle iron or frying pan, grease it and fry the batter in batches of waffles or pancakes. Dust with powdered sugar before serving. Serve with hot cherries, ice cream and whipped cream.
