Rub the meat with salt, brush with fat, cover with bacon slices, place on the greased rack of the grill roasting pan rinsed with water and put in the oven at 220-230 degrees on the lower rack.
As soon as the drippings brown, pour some hot water into the roasting pan. When the roast is cooked, after about 1 1/2 hours, prepare the sauce from the loosely cooked gravy, the required amount of water, the cream or canned milk and the stirred potato starch on the hotplate and season to taste.
