Peel potatoes, clean zucchini, wash both and grate coarsely.
Finely chop the onion. Mix everything with breadcrumbs and season with salt and pepper.
Form 16 small patties about seven centimeters in diameter and fry in heated oil. Clean, wash and slice the tomatoes and cucumber. Spread vegetable-potato patties with pesto, top with lettuce leaves, tomato and cucumber slices and assemble into burgers. Wash cherry tomatoes, cut off a lid, remove seeds and fill with remaining pesto. Serve vegetable burgers and cherry tomatoes arranged on plates.
