🍓 Ingredients

1 Zucchini
1 small Eggplant
1 Onion
2 large Sweet potatoes
5 Carrots
1 can Tomatoes chunky approx. 400 g
1 Garlic clove
750 milliliters Vegetable broth
2 tablespoons Herbs Italian e.g. basil oregano marjoram thyme paprika rosemary savory
1 tablespoon Oil
  Salt and pepper

🍽 Instructions

Dice onion, coarsely dice sweet potatoes, slice carrots, slice zucchini and then cut in half, coarsely dice eggplant. Sauté onion in a pot with a little oil. Press garlic and add to onions. Fry sweet potatoes and carrots briefly. Deglaze with the vegetable stock and let everything cook for about 10 minutes. Add the zucchini and eggplant and stir well.

The sweet potatoes should slowly break down in the process.

Add the can of tomatoes and the Italian herbs and season everything with salt and pepper. Remove the pot from the stove and let it sit for about 40 minutes with the lid closed.

If the whole thing is too vegetarian, you can make meatballs with it.
