Make a shortcrust pastry from the top ingredients. Spread half-finger thickness on a moistened baking sheet and prick a few times with a fork. Blind bake at about 170 degrees (about 8 – 10 minutes) and then top with halved apricots (skin side up).

For the curd mixture, beat the egg whites until stiff and add the sugar. Cream butter, powdered sugar, flavorings and egg yolks. Fold in the quark and beaten egg whites.

Spread the mixture on the apricots and bake slowly at 150°C for about 50 minutes. Tastes simply super! Got the recipe from my mom! Can also be made with whole spelt flour.
